Where To Dine
As the capital of Denmark, this Scandinavian city offers some of the finest culinary destinations in the world. In fact, if you think of Copenhagen, most people instantly think of Noma, which has gained notoriety as the world’s best restaurants not just one time, but four times! Aside from Noma, the city is full of delicious restaurants that make it an exciting time to visit.
Dubbed the world’s best restaurant four times, Noma is the brainchild of Danish chef René Redzepi. The original Noma was one of the most important restaurants, serving up an entirely new genre of cuisine that delighted every one who was lucky enough to get a reservation. Recently reopened on the artsy Refshalevej Island, Redzepi introduced a new type of dining structure: the menu is divided up throughout the year into three seasons, during which the menu changes dramatically to match the type of ingredients that are at the peak at any given time during the year. Vegetable season runs from the end of June to the end of September, while their game and forest season runs from early fall to the end of the year, and expect to dine on delicious seafood during the months ranging from January to May. If you happen to score a seat at this ultra-exclusive and hard to book eatery, you’re in luck and you will not be disappointed. Vegetable dishes feature anything that is edible, cooking what they can find underground, above ground, near the water and in the trees. The daring and exciting menu is created entirely of vegetables, too, and is as delicious as one that has meat on it. Those who love meat will love the Game & Forest Season menu, where meat plays a staring role in every menu item. From wild duck to goose, and more out of the ordinary selections, every selection is elegantly plated. When seafood season hits, the menu offers up items that range due to availability, but expect everything from fresh fish to scallops and more!
Aamanns offers a terrific selection of traditional Scandinavian favorites from a classic smørrebrød menu into the 21st century by adding ingredients like soured milk, pickled pears and buckwheat. With a strong focus on sustainability, lunch and dinner is served daily and diners enjoy items including their homemade pork sausages, a pork rib sandwich, a beef tartare, summer salads, and more. Thirsty? Enjoy inventive cocktails, including their Flyversjus, with lemon soda and lemon schnapps, as well as Stormy with lemonade, schnapps and ginger beer.
One of the sleekest restaurants in Copenhagen, Formel B, also features some of the freshest cuisine. The Michelin starred restaurant, which utilizes only the finest locally sourced and produced ingredients, comes to the Danish capital by Kristian Meller and Rune Jochumsen. The duo devised a menu focused on delicious French menu items, and offers a six-course menu which changes every month. An impressive wine cellar boasts around 400 different vintages to select from with your dinner.
Situated in the Tivoli Gardens, at Gemyse, organic vegetables are the stand-out features with plenty of taste and texture. Enjoy precision-cooked vegetables where the chefs use spices from throughout the world. The vegetable based restaurant, which sits inside the Nimb Hotel, prepares attractive and tasty dishes including selections like a tortilla with zucchini and monks cress, falafel with crushed herbs, farmed salads with zucchini and avocado, as well as organic mussels with Bakskuld and brioche and more! Sip from impressive cocktails too, like their sparkling lemonade with gin and Champagne, and their Chamomile & Elderflower drink with vodka, and fermented honey.
